These textured 450mm rolls are generally pretty hard to find, as most home sealers are only 280mm wide, so there isn’t quite so much demand for them. However, let me discuss this a bit more in detail, and you might find something interesting.
Please note that a typical sealer at home requires textured rolls rather than the smooth rolls used in commercial vacuum chamber sealers. Many rolls beyond 280mm wide are smooth and won’t work in home based sealers. Don’t worry, these will work in home-based sealers as they are the textured kind.
At first glance, the price per roll will seem quite a bit higher than the price points found on cheap 280mm vacuum rolls that you can buy online. However, the quality and materials are in fact, thicker than the cheaper ones.
While I’d always recommend that you use the right tool for the job, especially in commercial kitchens where time is money, there are times that you might need to improvise to use what you have “on hand”.
This is a situation I found myself in. Most of the cheeses I make are designed for individual consumption. However, when I was tasked to make a bigger cheese, I found my 280mm rolls weren’t wide enough.
So if you can’t stretch to a wider and more expensive vacuum sealer, it’s possible (with some fiddling) to seal this 450mm roll in a 280mm wide home sealer by cutting off the corners and sealing each end somewhat diagonally, crossing over in the middle. So it might shock people that they can probably these 450mm rolls at all.
As a proof of concept, here is a picture of my larger cheese in some 450mm roll, that was sealed in a 280mm sealer. This is a 3.9Kg immature Gruyere cheese infused with black garlic (it is not mould growing due to a failed seal).
The cost of these rolls is substantially less than a new wider sealer, so if you find yourself in a pinch, then it is very handy to have these on hand.
