How does vacuum marinating work?

Drawing the air out of the container opens up the food so the marinade is pulled in quickly, which cuts marinating from hours to minutes. Fill the container, add the marinade, fit the lid, and vacuum it with a LAVA sealer or the Easy-Pump.
650ml suits smaller single portions, 1650ml is a wider, flatter shape good for steaks and fillets, and 2000ml takes larger or taller batches. The Set Special includes all three plus the Easy-Pump, which is the easiest way to start from scratch.
