Controlled Maturation Inside the Membrane Bag Dry aging takes place inside a LAVA A-Vac Dry Aging Bag, where the beef can naturally lose up to 20% of its weight during maturation. To begin, the membrane bag must be properly vacuum-sealed using a vacuum sealer. For optimal results, maintain a consistent refrigerator temperature between 0°C and +4°C. Stable temperature control throughout the entire process is essential to create ideal aging conditions and achieve superior flavour, texture, and overall quality.

During the aging process, the specialised membrane layer of the dry aging bag adheres closely to the surface of the meat. It is important to position the meat correctly and avoid unnecessary movement to ensure consistent maturation. The membrane is airtight from the outside while remaining diffusion-open, allowing controlled moisture loss. This natural reduction in weight intensifies flavour and improves texture over time. After completion, the dry outer crust is trimmed away. A light surface layer of natural fat supports the process and contributes to optimal aging performance.

After a minimum of 3 weeks, or up to 4 weeks for deeper flavour development, the outer layer is removed to reveal a premium-quality, tender core. The aging process enhances flavour concentration, refines texture, and creates remarkable depth and richness.
