Why Open Sous Vide Baths Lose Water

A sous vide bath loses heat two ways: evaporation from the open water surface, and heat radiating off into the surrounding air.

Both effects accelerate over long cook times. A 24-hour short rib or a 48-hour brisket can lose enough water to expose the top of the bag.

Less Work for the Circulator

When heat escapes from the surface, the immersion circulator has to work continuously to replace lost heat.

Adding a floating layer helps the bath hold temperature more efficiently, especially during extended cooks.

The insulation balls float on the water surface and pack together to form a near-continuous layer. This physically blocks evaporation, so the water level stays stable over long cooks without needing to top up.

Practical Effect on Long Cooks

For short cooks, the difference is minor. For longer cooks, the insulation layer becomes much more useful.

Do I need these for short cooks?

Not really. For cooks under 2-3 hours, evaporation and heat loss are minor and most circulators handle it without issue. The balls make the most difference on cooks of 8 hours or longer.
No. The balls are loose and float freely, so the circulator can sit through them. Position the circulator before adding the balls, or push the balls aside to insert it.
Enough to cover the water surface of your container. A larger container or stockpot needs more balls than a dedicated sous vide tub. Add balls until the surface is fully covered with a single layer.
