One Tool, the Correct Angle, Every Time
The Vulkanus V mechanism follows the blade's own edge angle, sharpens and hones in one pass, and works on smooth and serrated steel knives.
The Problem With Manual Angles
Most manual sharpening methods rely on the user holding a consistent angle by hand.
A few degrees of variation between strokes is normal, and over time this unevenness can leave a blade sharp in places and dull in others.
The Vulkanus V Mechanism
The sharpening rods are mounted on patented spring-loaded arms that follow the angle of whatever blade is drawn through them.
Instead of forcing a fixed angle, the tool finds and maintains the blade's own angle.
How the Sharpening Action Works
Blade Enters
The knife is drawn through the V-shaped sharpening rods.
Rods Adjust
The patented spring arms settle between 11 and 21 degrees.
Edge Is Finished
The blade is sharpened and honed in one pass.
Sharpening and Honing in One Pass
A typical sharpening routine involves two separate steps: sharpening to remove material and create a new edge, then honing to realign and polish that edge.
The V Knife Sharpener combines both into a single draw of the blade through the rods, so there is no separate honing step to remember.
Works on Serrated Knives Too
Because the rods follow the blade's geometry rather than requiring a flat edge to register against, the sharpener also works on serrated blades.
This makes it useful for bread knives and similar serrated steel knives, which many flat sharpening systems cannot handle effectively.
Smooth Steel Knives
Suitable for maintaining everyday chef knives, utility knives, and other smooth steel blades.
Serrated Steel Knives
Works on bread knives and similar serrated blades because the rods follow the blade geometry.
Working Kitchens
Designed for home cooks and commercial kitchens maintaining a set of steel knives.
Not for Ceramic Blades
Ceramic blades are the exception. Ceramic is significantly harder than the steel rods and would damage them rather than be sharpened by them. Ceramic knives need a diamond-based sharpening system.
Maintenance
A damp cloth is sufficient for routine cleaning.
The product is dishwasher safe but this is not recommended, because heat and detergent are unnecessary for a tool that only contacts clean blade steel and may affect the spring mechanism over repeated cycles.
Also Available
This version is stainless steel. A black plastic version is also available.
Knife is not included.
Best For
Home cooks and commercial kitchens maintaining a working set of steel knives, anyone who wants one tool that replaces both a sharpening stone and a honing steel, and knife sets that include serrated blades.
Made In
Made in Austria from stainless steel, with patented springs and professional sharpening rods.
Vulkanus V Knife Sharpener — Common Questions
Does it work on ceramic knives?
Does it sharpen and hone separately, or in one step?
Can I use it on serrated or bread knives?
What is the difference between this and the black plastic version?
The mechanism, sharpening angle range, and one-pass sharpen-and-hone function are the same. The difference is the housing material, stainless steel on this version versus black plastic on the other version. Stainless steel is more suited to a commercial kitchen environment or for buyers who prefer a metal tool on the bench.
