Toward the end of the cooking time, remove the roast and let it rest for 5-10 minutes. For the sauce, boil the drippings with a cup of cream.

 

Recipe for Whiskey-Infused Cooked Ham: For around 1 kilogram of lean pork: Boil 250 ml of water and add 1 tbsp of sugar and 25 grams of (curing) salt. Include 4-5 sprigs of rosemary, juniper berries, peppercorns, 1 bay leaf, 1 cinnamon stick, and 3 garlic cloves. Allow it to simmer for 20 minutes, strain, and let it cool slightly. Stir in 4 cl of your favorite whiskey into the broth. Next, the process requires finesse. Use a large disposable syringe (e.g., from a pharmacy) to draw the liquid and inject it into the meat. Seal the meat along with another dash of whiskey (2-4 cl) and rosemary in a food vacuum seal bag or vacuum seal roll. Allow the ham to marinate in the fridge for at least 1 day, or for a more intense flavor, 2-3 days, turning the bag multiple times. Subsequently, immerse the ham in a water bath at 72 degrees Celsius for 1 hour. Enjoy warm or cold.
